Cheeseburger Soup

This creamy ground meat soup is easily customized to your diet, be it low fat or high fat, with just a few tweaks. It is a low carb soup, full of flavor.

I found this soup over three years ago, somewhere online. I must’ve been on a low carb diet at the time because this one was both low fat and low carb. Now, this doesn’t exactly fit my current diet but it is close enough to adjust with just a few easy changes. The low carb works but the low fat does not, as keto is a high fat diet because you are in a state that your body is burning fat.

The recipe calls for ground turkey and this is what I used. However ground turkey is a low fat meat. Consequently, I added a couple of tablespoons of coconut oil as I was browning it. As it browns, add salt, pepper, and onion powder.

Add chicken broth, basil, and veggies. When I made this the other day, I was out of fresh broccoli so I used a bag of frozen broccoli, cauliflower, carrot medley.

Cheeseburger Soup ~ Lifeofjoy.meCheeseburger Soup ~ Lifeofjoy.meBring it to a boil, then reduce the heat to a simmer. Cover and cook for about 20 minutes, until the veggies are tender or how you prefer them. (We do not like our cooked veggies crunchy.)

We also do not like big chunks of vegetables, so I break them up a bit. ;)

Cheeseburger Soup ~ Lifeofjoy.meNow add heavy cream, half and half, or fat-free half and half depending on the level of fat you need in your diet. Also add in the shredded cheese at this time.

Serve as soon as the cheese is melted.

Cheeseburger Soup

Ingredients

  • 1 pound ground meat
  • 2 teaspoons onion powder
  • salt and pepper, to taste
  • 1 teaspoon basil
  • 3 cups chicken broth
  • 1 1/2 cups each broccoli and cauliflower OR a small bag broccoli, cauliflower, carrot medley
  • 1 1/2 cups heavy cream, half and half, OR fat-free half and half
  • 8 ounces shredded cheddar cheese

Instructions

  1. Brown the ground meat, season with salt, pepper, and onion powder. (If you need it low fat, remove the drippings but if you use ground turkey and you need the fat, add a couple of tablespoons of coconut oil.)
  2. Add chicken broth, basil, and veggies.
  3. Bring to a boil.
  4. Reduce heat to a simmer and cook covered for about 20 minutes, until vegetables are desired tenderness.
  5. Add cream and cheese. Remove from heat immediately.
  6. Stir until cheese is melted.
  7. Serve!

Hamburger and Roasted Veggie Soup

Versatile soup with lots of flavor from roasted veggies that can either be made deliciously fatty (aka fat bomb) for those on keto, low fat, or somewhere in between.

Today’s recipe is a wonderful soup that has lots of flavor added by roasting veggies. The first time I made it, I didn’t have any brussels sprouts and it was good like that as well. This time I had some frozen brussels sprouts to use. You can eliminate whatever veggies you want or substitute veggies. But this combination was really good.

There’s a lot of chopping to be done, so be sure to give yourself enough time to do so. If I were smart, I’d chop the veggies earlier in the day, so I don’t have to be concerned about time. We don’t like big crunchy veggies in our cooked food, so it takes me a little longer. ;)

Begin by preheating the oven to 350º. Cut the brussels sprouts in half or even quarters, if they are large. The ones I have today are small so I only cut them in half. Dice mushrooms into large pieces. I used about 6-8 mushrooms.

Hamburger and Roasted Veggie Soup ~ Lifeofjoy.meDice a large bell pepper. I like the yellow or orange because they add a little color contrast and different colored foods have different nutrients. I got a good deal on the mixed color peppers, so I used an orange one today. I cut it into about the same size chunks as my mushrooms.

Combine these four veggies on a rimmed baking sheet. Drizzle with melted coconut oil, olive oil, or oil of your choosing. Season with salt and pepper.

Meanwhile, brown your ground meat over medium low heat. We used ground turkey which is leaner than ground beef, so we added a bit of coconut oil to it as we cooked it.

Hamburger and Roasted Veggie Soup ~ Lifeofjoy.meWhile that is browning, get to dicing the celery. ;) We dice our celery pretty finely. Once again, we don’t like crunchy veggies, so these are rather small. Also mince the garlic.

Hamburger and Roasted Veggie Soup ~ Lifeofjoy.meAdd the celery and garlic to the cooking ground meat. If you are on keto, do NOT drain the fat. You may even need to add a little if you used a lean meat like we did. ;)

Once the celery is pretty well cooked, add the broth, tomatoes (which we will puree next time with the hand blender before adding because, we don’t like chunks :D ), tomato paste, oregano, bay leaf, and either cayenne or chili powder.

Combine and bring to a boil. Then reduce heat to low and simmer for 15-20 minutes. (We accidentally put in too much tomato paste! Way too much!)

Hamburger and Roasted Veggie Soup

Ingredients

  • 200g brussels sprouts, cut in half
  • 125g mushrooms, diced (about 6-8 medium)
  • 200g yellow or orange bell pepper, diced (about 1 large)
  • 125g red onion, diced (about 1 small red onion)
  • 1/4 cup oil (olive, melted coconut, or your preference)
  • Salt and pepper to taste
  • 1 pound ground meat
  • 2 large stalks celery, finely diced (about 70 grams)
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, pureed (14-16 ounces)
  • 1 Tablespoon tomato paste
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • pinch cayenne pepper or 1/2 teaspoon chili powder
  • 1/4 cup fresh parsley, chopped
  • freshly grated Parmesan cheese (optional)

Instructions

  1. Preheat oven 350º
  2. Combine brussels sprouts, bell pepper, red onion, and mushrooms on a rimmed baking sheet with oil, salt, and pepper.
  3. Roast for 25-30 minutes, stirring after about 15 minutes so they don't brown too much on one side.
  4. Brown ground meat in a dutch oven or large pot, over medium low heat.
  5. Add celery and garlic, cook until celery is softened.
  6. Add broth, tomatoes, tomato paste, bay leaf, oregano, and cayenne or chili powder.
  7. Bring to a boil.
  8. Reduce heat to low and simmer for 15-20 minutes.
  9. Add roasted veggies and chopped parsley.
  10. Serve.

(I like some measurements in grams because it is more precise, but usually only with baking. However the base recipe for this used grams and I forgot to re-measure into cups.)

This is a lot like the filling I put in my Egg Rolls with ground meat instead of chicken breast. Since it is not in a wrapper, it is low carb.

I got this recipe from peaceloveandlowcarb.com recently and I loved it. We’ve made it a few times already and I still really like it. :) It is also really easy to make. Much easier to make than egg rolls, too. :)

Start by heating sesame oil in a large skillet.

I add one shredded medium carrot to my sliced cabbage because that is what is in a package of coleslaw veggies. :) You don’t have to if you don’t want to, it’ll be less carbs without it.Add the Tamari sauce or soy sauce, and rice wine vinegar. I don’t have rice wine vinegar so I use the seasoned rice  vinegar I do have. :)

Ingredients

  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1/2 cup diced onion
  • 5 green onions, sliced
  • 1 pound ground meat
  • 1/2 teaspoon ground ginger
  • salt and pepper to taste
  • 1 tablespoon sriracha
  • 14 ounces sliced cabbage with grated carrot or coleslaw package
  • 3 tablespoons tamari or soy sauce
  • 1 tablespoon rice wine vinegar or vinegar of your choice
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Heat sesame oil in large skillet.
  2. Add diced onion, minced garlic, and sliced green onion (white part)
  3. Sauté until onion is translucent
  4. Add ground meat, ground ginger, salt, pepper, and sriracha.
  5. When meat is cooked through, add cabbage (with the carrot), tamari or soy sauce, and vinegar.
  6. Sauté until the cabbage is wilted.
  7. Serve with toasted sesame seeds and sliced green onion (green part).

The Long Errand Day

Errand day this week was a very drawn out ordeal. We started with Tiffany’s appointment. After that we had to go do a little Christmas shopping, some of which we did at the mall. I seldom go to the mall so I naturally parked in the absolute wrong parking lot. Then we ended up walking clear across the mall several times because I don’t know where anything is there.

This was taken a few weeks ago and it was ridiculously warm for so late in the year.

 

We stopped in the food court and ate at my favorite mall place–Charley’s. I am a sucker for a steak and cheese sub. You might think, but you can’t have that on keto. All it takes is a little creativity. I get the three cheese and bacon one without the bun but add on onions, mushrooms, and peppers cooked very well done.. I was very happy that they didn’t seem shocked with my request. They even asked me if I wanted the lettuce and tomato still and if I wanted it under or on top of my meats, cheese, and hot veggies. I add a little salt, pepper, and mayonnaise. Delicious!

Tiffany got part of her gift to Sean and then we headed further into town on the hunt for an illusive gift. Retraced our path, stopped to pick up books from the library, and finally began our grocery shopping after three o’clock. In all of our running around today, I found not one but five different purses that would make a good replacement for the one I’ve been using for the last year or more, which has its shoulder strap hanging on by a thread, literally. Funny thing is that I had looked at Gordmans several weeks ago and didn’t find a single one I liked. I’m soooo glad I did not settle on one I saw last week, at a store I don’t like to shop, for twice the money I ended up paying for this one. :) God is good! I just have to be patient.

Long Errand Day ~ Lifeofjoy.meAs we were about to begin getting groceries, Michael texted and asked if we were about done and ready to head home. He was shocked when I told him that we’d only just begun to grocery shop. He suggested that I bring home some pizzas to throw in the oven, since it was getting so late and he knew we were getting tired. I paid way more than I’d like to admit for a frozen pizza but it is keto! and that my friends, is worth a lot. We got the 3-cheese pizza because we love cheese and generally have pepperoni at home to add.  I also picked up a Red Barron cheese pizza for Michael because he said he didn’t need or want anything fancy. We got home, added pepperoni to both pizzas and enjoyed a dinner with minimal effort.

Well, Brian, Lauren, and Liam are coming tonight for dinner and cookie decorating. I didn’t get the cookies made yesterday even though I had planned to do so, Thus I need to make them first thing this morning in order to have them ready tonight. :) Hopefully I’ll remember to take some pictures and have them to share with you next Friday.

Chicken Lasagna Florentine

A creamy, cheesy, chicken dish with spinach.  You could serve this over pasta of some kind or zoodles, if you desire but we just eat it the way it is. Good served with broccoli, to share some of that yummy sauce.

Well, Tiffany and I dropped the ball yesterday. I was working on my dad’s final dessert completing his Christmas present from last year, so Tiffany began working on dinner, which was this recipe. Well, since I was dealing with a bad recipe, I didn’t remind her to take pictures. Then when I finished what I was doing and helped prep the ingredients she needed, I was so frustrated with my recipe flop that I didn’t even think about the pictures again.

So, she finished layering the ingredients and put it in the oven and that is when I remembered. Crazy! Consequently I tried to figure out something else I could share but I just couldn’t come up with anything else. Thus I’m sharing this recipe without procedural pictures. Sorry guys!

First you cut up the chicken into bite-size pieces and cook in a skillet with a little bit of oil.

Cook Chicken ~ Lifeofjoy.meNext prepare the alfredo sauce. Melt one tablespoon of butter in a pot and add a clove of garlic, minced, cooking for about 30 seconds or so.

Then add  one and a half cups of heavy cream and simmer for about 5 minutes.

Then add 1/4 cup of shredded Parmesan cheese and 2 ounces of cream cheese.

Combine well. Simmer the sauce on low for about 10-15 minutes. This is important because the sauce will thicken during this time.

Meanwhile, prep remaining ingredients (I don’t have all of the spinach pictured here.)

Preheat the oven to 350º.

Add the chicken to the sauce.

Now it’s time to layer it into a 9×9 or similar pan. (Pictures show an 8×11 pan.)

Bake for about 20 minutes, uncovered. Can broil for a few minutes to brown the top a bit at the end.

Let it stand for about 10 minutes, if you can, and the cheese will stiffen up a bit and make it easier to serve and look less like soup. As you can tell in this picture, we didn’t wait. ;)

Chicken Lasagna Florentine

Ingredients

  • 2 pounds chicken breast
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup Parmesan cheese, grated
  • 2 ounces cream cheese
  • 2 cups mozzarella, shredded
  • 2 cups spinach, I slice mine into ribbons
  • 1/4 cup Parmesan, shredded

Instructions

  1. Cut the chicken breast into bite-size pieces and brown in olive oil. Season with salt and pepper as desired.
  2. Melt butter in pot and saute garlic for about 30 seconds.
  3. Add heavy whipping cream and simmer 5 minutes.
  4. Add cream cheese and 1/4 cup Parmesan cheese, Whisk to combine.
  5. Simmer 10-15 minutes on low to allow the sauce to thicken up a bit.
  6. Preheat oven to 350º
  7. Add chicken to sauce.
  8. Layer ingredients into 9x9 pan:
  9. chicken sauce, spinach, mozzarella
  10. chicken sauce, spinach, mozzarella, Parmesan
  11. Bake about 20 minutes.
  12. (Can broil for a few minutes at the end to brown the top a bit.)
  13. Let sit for a few minutes when it is finished to allow the cheese to set just a bit and make it easier to serve. 😉

Seasoned Green Beans

Green Beans, regular cut or french cut, seasoned with ham and minced onion. If slow cooked, you might even think they were from Cracker Barrel. ;)

Are your green beans boring? Here’s how to make delicious green beans. All it takes is some canned green beans, bacon or other ham pieces, onion powder or minced onion, salt and pepper. You could use fresh or frozen green beans but you’d have to cook them a LOT longer.

Empty a can of green beans into a pot, french cut style or regular cut style. Pour out some of the liquid, about half of what is in it.

Seasoned Green Beans ~ Lifeofjoy.meThen add a piece or two of bacon (or ham of some sort), depending on how thick it is. I used one piece of turkey bacon.

Seasoned Green Beans ~ Lifeofjoy.meBring it to a simmer and cover. Simmer for a bit. You can serve them as soon as they are hot, if you used onion powder. Otherwise, cook for about a half an hour. You can also put this in a slow cooker and cook for several hours.

  • Canned green beans
  • minced onion
  • piece of turkey bacon
  • salt and pepper to taste

Instructions

  1. Combine all ingredients in pot or slow cooker.
  2. Simmer on stove for about 30 minutes or several hours in slow cooker.

Cheese Cracker ~ Lifeofjoy.me

Cheese Crackers

Every once in a while I want a cracker. A cheese cracker. :)

I found the inspiration for this little gem on YourLighterSide.com.

They are incredibly easy to make. :) All you need are a microwave and a deluxe slice of American cheese.

Start by taking a deluxe American cheese slice. I’m told it has to be the deluxe. I’ve not tried it with anything else.

Cut it in half. I use a long blade knife, so that I can just press it down and not have to drag it.

Cheese Crackers ~ Lifeofjoy.meSpace them apart so they don’t melt into one big piece. Microwave for 30-45 seconds.

Spaghetti

A tomato-based meat sauce with some of the acidity removed.

I’m going to share my “recipe” for spaghetti today. It’s one of those, not-really-a-recipe, kind of recipes though. My mom taught me to make this and she never used a recipe either.

Actually, I use this same sauce, with only slight changes, for lasagna too. Don’t be scared off by the zoodles (the green strands). This is my normal spaghetti sauce that I serve over angel hair pasta but since I’m on keto right now, we are having it over the strips of sauteed zucchini.

So this is super simple. Start by browning one pound of ground meat. I use ground turkey right now. Season with some salt and pepper. Add one 6 ounce can of tomato paste. Then fill the empty can with water and add it as well; add one more can of water and combine.

Spaghetti ~ Lifeofjoy.meMix it in well and add 16 ounces of plain tomato sauce.

Spaghetti ~ Lifeofjoy.meAdd a sprinkling of onion powder and a dash of garlic powder. Simmer.

Now the important thing is to add about 1/8th of a teaspoon of baking soda. Stir it around. It will bubble up and remove some of the acidicness. (Yeah, that’s probably not even a word. ;) ) If you cook this in a cast iron skillet like I did, don’t let it simmer very long with the baking soda in it or it will darken on top. It doesn’t do this in any other skillet or pan that I know of.

Serve over pasta or zoodles or whatever you choose. :)

Ingredients

  • 1# ground meat
  • onion powder
  • garlic powder
  • salt
  • pepper
  • 6 ounce can tomato paste
  • 16 ounces canned tomato sauce
  • 1/8 teaspoon baking soda
  • Shredded cheese or Parmesan cheese (optional)
  • 1/3 cup diced green, red, orange, or yellow pepper (optional)
  • 1/3 cup diced onion (optional)
  • 1/2 cup diced mushrooms (optional)

Instructions

  1. Brown the ground meat. (Can add the veggies to cook with the meat or saute separately.)
  2. Season with salt and pepper.
  3. Add tomato paste. Fill empty can with water (two times) and add to meat and tomato paste.
  4. Add tomato sauce.
  5. Sprinkle with onion powder and dash with garlic powder.
  6. Bring to a simmer.
  7. Add the baking soda.
  8. Serve over zoodles or pasta.

Pepperoni Pizza Muffins ~ Lifeofjoy.meI love pizza! Yep! I sure do! Many diets have failed me because I cannot imagine giving up pizza forever (and sometimes, not even for a few months). So you might be able to imagine that I struggled a bit on the keto diet which does not allow bread.

Naturally I had to find a few recipes to help me through this dilemma. The first is one I have had for several years, Pizza Topping Casserole, which is really quite good. It has all the flavor of the toppings with a hint of the sauce but nothing to substitute for the crust. It works some of the time. The second is the breakfast keto pizza. This one has a crust, yummy toppings, sauce and filling.

Pepperoni Pizza Muffins ~ Lifeofjoy.meWell, today I bring you Pepperoni Pizza Muffins. This has that bread quality without any wheat, corn, rice, et cetera. According to them, the muffins have 2 net carbs per muffin, 182 calories, 14.4g fat, and 7.8g fiber. My counts will be a little different because I used turkey pepperoni since Mike is allergic to both beef and pork, and cheddar cheese instead of the recommended mozzarella.

Tiffany first fixed these for us to have the week of the conference as a grab and go breakfast. I decided I needed to make them again to have on hand. Plus, I needed a recipe to share with you today. ;)

Pepperoni Pizza Muffins

Ingredients

  • 5 ounces cream cheese
  • 1/2 cup grated Asiago cheese
  • 1/4 cup coconut flour
  • 2/3 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons water
  • 5 eggs
  • 1/2 cup pepperoni (about 2 ounces)
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 400º and spray muffin tin.
  2. Place eggs in mixer and beat eggs slightly.
  3. Add flours, baking powder, salt, cream cheese, Asiago cheese, and water; combine.
  4. Cut pepperoni into quarters. Add it and 1/2 cup shredded cheese. Combine.
  5. Fill muffin tins 1/2 - 3/4 full.
  6. Bake 20-30 minutes.

If you want these for lunch, you might heat up some marinara sauce and dip it in.

Mug Bread (Gluten-Free)

A bread made from egg, almond flour, flax (flour), quickly made in the microwave.

From time to time I need to have a “bread” that is not really a bread, if you know what I mean. I’ve been doing the keto diet for the past month or so and finally got to the point I “needed” some bread.Mug Bread ~ Lifeofjoy.me

Thankfully this is not a new scenario for me and I was able to go and dig into my hCG recipes for this, very simple, quick and easy bread that is made in the microwave in just 70 seconds. :)

I have a friend that needs this right now too, so I’m sharing it here for her future reference, as well as my own. ;)

You need just a few ingredients. If you make anything gluten-free from scratch, you probably already have some of these items.

Mug Bread ~ Lifeofjoy.meCombine all ingredients in a mini food processor, magic bullet, blender, or mix in the actual baking container with either a immersion blender or your own arm power and a whisk. Tiffany chooses the later but I go ahead and get out the mini processor.

Mug Bread ~ Lifeofjoy.me Transfer to your mug or english muffin-sized bowl. I used this small soup bowl.

Mug Bread ~ Lifeofjoy.mePop it into the microwave for 70 seconds. (I go through spells where I don’t use the microwave for long spells and then want it again for a few things. I have not figured out how to make this without using the microwave, although I figure it’s got to work in the oven; I just don’t know how long it would need to cook.)

Mug Bread ~ Lifeofjoy.meI loosen it around the sides with a small rubber spatula/scraper and turn it out onto a plat or cutting board.

Mug Bread ~ Lifeofjoy.meWhen cut in half horizontally, this makes two rather thick pieces of “bread”; so I cut it into three slices. Then I love to make a sausage, egg, and cheese sandwich with two of the slices and a piece of toast with the last. :)

Ingredients

  • 1 egg
  • 1/4 cup almond flour
  • 1 Tablespoon flax meal
  • 2 teaspoons butter
  • 1/2 teaspoon baking powder
  • 1 Tablespoon water

Instructions

  1. Combine all ingredients well. (I use a mini food processor)
  2. Pour into mug or other suitable microwavable container
  3. Microwave for 70 seconds.
  4. Remove from microwave and from baking container.
  5. Slice in 2-3 pieces and enjoy!
