Meatloaf Skillet

The taste of meatloaf but the speed of a skillet meal.

I love meatloaf. Since Michael has been allergic to beef, meatloaf has been a trial. I attempted to make it with ground turkey in the beginning but that had unfavorable results. It just didn’t taste right and I’d rather go without than to eat that.

Then I started low-carb diets and although I started making beef for me and the kids on occasion, I could no longer have the carbs that made it meatloaf.

I purchased some hamburger on sale recently and decided to fix some of it for my lunch one day. I had recently made some Swiss bread from the Trim Healthy Mama cookbook. I had this idea to add a piece, cubed to my crumbled ground beef and I was shocked how much it tasted like meatloaf! Now, if I had a stove where the broiler were in a position that I did not have to practically lay down on the floor to put anything under it, I would put some sugar-free ketchup on it and broil it until it is browned a bit.

So, without further adieu, here is how you make my Meatloaf Skillet. :)

Dice up some onion and green pepper.

Dicing Onion ~ Lifeofjoy.meI would use a small onion and about a quarter to a third of a green pepper. Add it with the ground beef to the skillet and brown it up.

Cooking Ground Beef ~ Lifeofjoy.meWe didn’t have green pepper this day so we used some colored peppers. :)

Saute onions and peppers ~ Lifeofjoy.meMy daughter made this for me on my birthday, so she did it slightly differently than I would have. Save yourself pans to clean, just put it all in the skillet together with some salt.

Next cube about a serving of swiss bread. You can make just one serving or make the whole loaf like I do and slice off a few pieces. Cut it into cubes and add it to the nearly finished browning meat. :)

Meatloaf Skillet

Ingredients

  • These measurements are approximates, use more or less as you desire.
  • 1 pound ground beef
  • small onion, diced
  • 1/3 green pepper, diced
  • salt and pepper to taste
  • THM Swiss bread, one serving, cubed (can use any "S" or "FP" bread)

Instructions

  1. Brown the meat with the onion, peppers, salt, and pepper.
  2. Add cubed bread, stir to combine.
  3. After a couple of minutes, remove from heat and eat.
  4. OPTIONALLY: Spread sugar-free (on plan) ketchup on top and put under the broiler until it is beginning to brown or the ketchup is thickened a bit.

Roasted Turkey Breast

The best part of a turkey dinner, nice, tender and juicy!

I found an awesome deal on turkey breast a couple of weeks ago. Normally over $16, I got it for under $3 at just 30¢ a pound. I actually bought two of them but wish I had bought several more.

I thawed it and seasoned it with some salt, pepper, onion powder, garlic powder, and a little poultry seasoning. Baked it for a couple hours and it was delicious!!! It tested at 165º.

Seriously, it is that simple!

A couple hours later, it smelled delicious and the juices were browning in the pan. The temperature was right on 165º.

Roated Turkey Breast ~ Lifeofjoy.meRoasted Turkey too ~ Lifeofjoy.meIt really seems odd to me. They just cut off the legs and wings and sell it like that. But that is the part that is favored around here anyway.

I’d give a recipe but there really isn’t one. Just sprinkle it with the seasonings you like and bake according to the package directions checking it for temperature rather than staying strictly with time.

Creamy Chicken and Wild Rice Soup

Smooth, creamy, and comforting delicious soup! This one is a THM E soup which means it is low in fat and has some good healthy carbs in there but it tastes anything but low fat. :)

I was looking through the Trim Healthy Mama Cookbook looking for something new to add to my menu one week shortly after starting THM. We had the promise of a few cooler days, which to me means soup. :) This one sure didn’t let me down.

So here’s what I do:

I finely dice about 3 or 4 stalks of celery and a large onion. Then I put them in my dutch oven with a little water, about a tablespoon or two. You don’t want so much that the veggies are swimming in it but enough to keep them from sticking to the bottom of the pan.

Saute Onions and Celery ~ Lifeofjoy.mePeriodically stir them and add more water as needed, until they have lost their crunch. They don’t have to be too well done because they are going to be cooking for over an hour so they will soften even more. You see, my family is picky about veggies, they should be melded into the flavor of the soup and not heard/crunched on. ;) Yes, this increases the amount of time required to cook this recipe but it is worth it for us.

Now we need to get the cauliflower cooked. So, sometimes I remove the veggies and others I just add the broth and cauliflower. Once the cauliflower is fork tender, use a slotted spoon and remove it from the pot to the blender, along with two cups of the broth. If some of the onions and celery makes the trip with the cauliflower or broth, no big deal. :)

Remove Cauli to the Blender ~ Lifeofjoy.meNow add carrots. I like to slice them on my mandolin. Again, we don’t like crunchy veggies so having these sliced thinner is better for us. ;)

Pink Himilayan Salt ~ Lifeofjoy.mefreshly ground pepper

Broth with Ground Pepper on top ~ Lifeofjoy.meand herbs. We do not care for thyme so I use oregano. :)

Oregano ~ Lifeofjoy.meSimmer for 45 minutes to an hour.

Add three ounces of Neufchatel cheese (1/3 less fat cream cheese) to the cauliflower in the blender and blend until smooth. Then add it to the simmered soup.

Add creaminess ~ Lifeofjoy.meStir it in well; then add pre-cooked chicken. I like to use chicken I cooked in the crockpot earlier in the week but you could always just take a large breast and saute it in a pan while the soup was simmering.

Stir it all together and let it heat up and meld the flavors at a simmer for about 15 minutes. You want the rice to break apart but it is ready as soon as it is hot. :)

Here are the tweaks I made:

  • less celery
  • substituted yummy oregano for the thyme
  • sautèd the onions and celery to ensure they were not detectable in the final soup
  • sliced the carrots on the mandolin so they too would be completely cooked
  • I did not measure the chicken, veggies, or black pepper
  • Oh! And I mistakenly used rice blend instead of just wild rice.

I hope you enjoy this as much as we have. Oh! It can be served with a slice of sprouted grain bread (warm from the oven is delightful) and still be an E.

Skillet Salmon

Quick, easy, healthy, and tasty meal. Eat is as an entrée or on a salad as we did here.

Pearl and Serene, the authors of Trim Healthy Mama, recommend eating fish, especially for stubborn losers. So since Tiffany loves salmon, I decided we’d have some for lunch. Salmon causes Michael’s heart to race, so I need to fix him another kind of fish when we have it for dinner.

So here is my quick way to make a tasty salmon. First, thaw the meat. If it isn’t quite thawed when you are about ready to eat, you can put it in some water to help it thaw quicker.

Skillet Salmon ~ Lifeofjoy.meAdd salmon. Mine wasn’t completely thawed but no worries, it thawed in the pan. ;)

Skillet Salmon ~ Lifeofjoy.meAdd fiber syrup gold or nature’s hollow honey with maple flavoring. Basically you are looking for a sweet syrup.

fiber syrup gold ~ Lifeofjoy.meCome to think of it, it doesn’t really have a maple flavor, just sweet, so use sweetener of choice.

Skillet Salmon ~ Lifeofjoy.meI cooked it on too high of a heat and was distracted by cutting the lettuce for the salad, so ours was a bit blackened but still yummy. :)

Ingredients

  • salmon
  • tamari or soy sauce
  • fiber gold syrup or other sweetener of choice
  • salt and pepper
  • tad of butter for frying

Instructions

  1. Heat butter in skillet and add salmon.
  2. Add tamari or soy sauce and sweetener.
  3. Season with salt and pepper.
  4. Cook until edges are opaque and then flip and cook until done.

Cheese Stuffed Pesto Meatballs ~ Lifeofjoy.me

Mozzarella Stuffed Pesto Meatballs

Whether you use homemade pesto or store-bought, this is an easy meatball meal that is a nice difference. Add the cheesy surprise and they are a hit. :)

I found this recipe on the I Breathe I’m Hungry website when we began our keto (low carb, high fat, moderate protein) diet about a year ago. She has so many varieties of meatballs that you could fix a different recipe every night for a month and still have a couple week’s worth yet to try.  These have a piece of mozzarella cheese stuffed inside them.

They are simple to make and could probably even be baked in the oven if you wanted to. If you haven’t done so already, go ahead and get your easy pesto made. :)

Now let’s get started. I’m using ground turkey but you could use whatever ground meat you desire.

Combine the ground meat,

Meatballs ~ Lifeofjoy.meAdd almond flour (if you’re a carb eater, you could use some breadcrumbs instead), egg, salt, pepper, and pesto in a bowl.

I like to make some kind of marks so I get relatively evenly sized meatballs. I think the original recipe makes this into only 10 meatballs but since there are four of us, I make an even 12. So first I divide it in half each direction so each section is about 1/4 the mixture.

Mozzarella Stuffed Pesto Meatballs

Ingredients

  • 1 pound ground meat
  • 1/4 cup almond flour
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 Tablespoons pesto + more for serving
  • 2 ounces fresh mozzarella (cut into 12 pieces)
  • 2 Tablespoons or more for frying

Instructions

  1. Combine ground meat, almond flour, egg, salt, pepper, and pesto in a bowl.
  2. Divide meat into about 12 meatballs and form meat ball around a piece of cheese.
  3. Fry in heated oil, about 4 minutes per side, until browned and cooked through.
  4. Serve hot with added pesto.
  5. We served on zoodles (strands of zucchini sauted in butter).

Low Carb Pizza Crust!

Hallelujah!!! Real hold-in-your-hand pizza! This is a great alternative for that carb-laden delight of the past.

Fathead pizza is all over the internet. I’m so glad I came late to the keto diet because people have figured out things like pizza crust, bagels, donuts, and muffins, not to mention cakes and cookies. Pizza is one of my favorite meals. My mother taught me to make pizza the way her mother taught her. It has been a staple in our family for a VERY long time.

I, like many others, have tried all kinds of pizza crusts: cauliflower, chicken, corn thins (during the Let’s Do Lunch diet), tapioca (good for paleo diets), and even egg based crusts. This one is a winner though. The others were an okay substitute for a while but eventually I would really crave that regular bread dough crust.

I had stayed away from this one while on other diets and even in the beginning of this way of eating because of the large amounts of cheese in the crust. You see, I didn’t know how it would work to have so much cheese IN the crust and then ON the crust too but I finally gave it a try and I love it!

Another reason I avoided this one was because every recipe I’d seen melted the cheese with the cream cheese in the microwave and I don’t like to use the microwave. Actually, for a long time I had my microwave put away. Then I learned that it works just as well on the stovetop.

Here’s how easy it is to make . . .

Put 1½ cups shredded mozzarella (I use part-skim because I was told it works better than full fat for this recipe) and 2 tablespoons of cream cheese in a heavy saucepan over medium heat. As it begins to melt combine the two and stir occasionally, until it is all melted.

Then add 1/3 cup of almond flour, 1/3 cup oat fiber 500, 1 teaspoon garlic salt, and a teaspoon dried oregano.

When partially combined and cool enough that it won’t cook the egg on contact, add the egg.

Combine thoroughly.

Spread out thinly on parchment paper on a pizza pan or cookie sheet.

Bake at 350º for 10-12 minutes, lightly browned.

Low Carb Pizza Crust!

Ingredients

  • 1½ cups shredded mozzarella (6 ounces)
  • 2 tablespoons cream cheese (1 ounce)
  • 1/3 cup almond flour
  • 1/3 cup oat fiber 500 (brand does make a difference)
  • 1 egg
  • 1 teaspoon garlic salt
  • 1 teaspoon oregano

Instructions

  1. Melt mozzarella and cream cheese over medium heat in a heavy saucepan.
  2. Thoroughly combine the two cheeses.
  3. When melted, add almond flour, oat fiber, and seasonings.
  4. Add egg and combine thoroughly.
  5. Flatten out onto parchment paper on a pizza pan or baking sheet.
  6. Bake at 350º for 10-12 minutes, until lightly browned.

This deliciousness is excellent for those on a keto or low-carb diet but it is not great for those on a calorie-restricted diet. I found it when I was on phase three of the hCg diet. However, when I decided I needed to watch my calories, this meal became taboo. But since being on the ketogenic diet, I have revived this awesome recipe.

I see on my print recipe copy that I got it from this website. She has lots of ideas for other ‘fillings’ in this chicken that I may yet have to try.

Here’s what I did. I started with a generous one pound chicken breast and sliced it about half both horizontally and vertically to get individual portions. Bacon-Wrapped Chicken

Ingredients

  • 1 pound boneless skinless chicken breast
  • 1 pound thin bacon, about 5 slices per serving, about 20 total
  • garlic salt
  • cream cheese
  • cheddar cheese

Instructions

  1. Cut cut your breast into 4 pieces and pound a little, between parchment paper or such to thin it evenly.
  2. Lay down three thin strips of bacon side by side and then two slices in the other direction.
  3. Lay the chicken on top.
  4. Add a little cream cheese, garlic salt, and cheddar cheese.
  5. Fold over the two strips.
  6. Then fold/roll the chicken on the three strips of bacon.
  7. Place seam side down on baking sheet.
  8. Bake 400º for 45 minutes. Flip chicken when top is crispy to crispy the bottom bacon.

Alfredo Sauce ~ Lifeofjoy.me

Alfredo Sauce

With just three simple ingredients, this one is a breeze to make. Oh! and it is delicious! ;)

I was on a keto facebook group perusing the posts when someone mentioned this alfredo sauce. I’ve seen alfredo sauces before that use cream cheese, so I was surprised when this one did not. The person said that the recipe was from the Pioneer Woman, so I did a search for it and was pleased to find it so easily. I was also pleased to find that it was a very simple recipe.

As you can tell from the featured image, I used this sauce on a pizza crust. It was very good and my family asked if we could have it again a couple days later . . . and we did.

So here’s how you do it:

Put half a cup of heavy cream (or heavy whipping cream) in a saucepan with half a stick of butter and heat it over medium low heat until it thickens up a bit.

Butter and cream ~ Lifeofjoy.meAdd a little salt and pepper if desired. Remember that the Parmesan cheese is salty, so don’t add too much.

Stir in salt and pepper ~ Lifeofjoy.meAfter it thickens up a little, add 1 cup shredded Parmesan cheese and stir.Add Parm ~ Lifeofjoy.meUnfortunately, I forgot to take a picture of the sauce before I added it to the pizza crust, so this is the best I can do. ;)

Alfredo Sauce ~ Lifeofjoy.meWe put it on the pizza crust, added cooked chicken, turkey bacon and spinach. I’ll share that recipe another time (probably next week).

Ingredients

  • 1/2 stick butter (salted)
  • 1/2 cup heavy cream
  • 1 cup Parmesan cheese, grated

Instructions

  1. Combine butter and cream in a saucepan over medium-low heat.
  2. Add a little salt and pepper to taste.
  3. When it thickens a little, add the Parmesan cheese and remove from the heat.
  4. Stir until it is all melted.

Taco Salad

Versatile hearty salad made with meat, cheese, lettuce and whatever else you like.

It is the middle of March and ridiculously hot already here in Oklahoma. Okay, maybe it isn’t quite that hot but our air conditioner is in need of help, a.k.a. it isn’t cooling. At any rate, it is too hot to make something in the oven for dinner tonight, so I’m changing up my menu and having Taco Salad instead. It’s good to be flexible.

This salad can be fixed in a variety of ways to meet your dietary needs. I’ll be making it TWO ways today! Yep, two ways. Since Sean, Tiffany, and I are doing keto we need high fat, so I’ll be using 73% ground beef. Currently Michael cannot eat beef or he breaks out in a rash and has difficulty breathing, so I’ll fix his with ground turkey. The only other difference will be in what ‘chips’ we use. Michael will use plain tortilla chips and the rest of us will use pork rinds. :)

So, let’s get started.

Brown the ground meat.

Now add remaining seasonings. This depends on your tastes. You can simply add a package of taco seasoning or a mix of seasonings like I do. Tiffany doesn’t like purchased taco seasoning, so I’ll use some onion powder, garlic powder, paprika, cumin, and chili powder.

Prepare your lettuce. Wash it if it is dirty. We like green leaf lettuce; it has nutrition unlike iceberg.

I put each ingredient in a separate bowl so that each individual can put on the toppings of their choosing. Since this meal was not on my menu when I shopped last week, I don’t have an avocado; thus, we’ll use some sour cream (which I don’t need if we have avocado).

We have tomato, refried beans (for Michael),  sour cream, and CHEESE tonight.

Tiffany put a little carrot, green pepper, broccoli, and zucchini in the salad. Seriously, a little of each, like a tablespoon or two. Most times it is just plain lettuce. ;)At dinner, everyone will build their salad to their liking. This is mine. :) Mmmm, mmmm!

  • 1-1½ pounds ground meat
  • ¼ teaspoon each cumin and garlic powder
  • heaping ¼ teaspoon chili powder
  • ½ teaspoon each paprika and onion powder
  • salt and pepper to taste
  • lettuce
  • cheese, your preferred variety
  • various veggies on hand, like tomato, onion, green pepper, zucchini, broccoli, carrot, avocado, etc.
  • sour cream, optional

Instructions

  1. Brown the ground meat.
  2. Season with the listed seasonings.
  3. Tear washed lettuce leaves into bowl and add in variety of veggies or none at all.
  4. Serve salad with meat, cheese, sour cream, and tortilla chips or pork rinds, as desired.

Enchilada Bake

This casserole is a bit like the Enchilada Pie but low carb. It satifies that desire for Mexican food.

This is another wonderful recipe from Genaw. I usually put off making it because it is baked twice: once for the ‘crust’ and then once for the casserole cheese to melt. But when we eat it, we always remark about how good it is.

Set out 4 ounces of cream cheese to soften. Beat the softened cream cheese and eggs until smooth.

Add seasonings. I combine onion powder, garlic powder, paprika, cumin, chili powder, salt, and fresh ground pepper but you can use your favorite taco seasoning. Mix well.

Add in 8 ounces of shredded cheddar cheese.

Spread evenly into a greased 9×13″ baking dish.

Bake at 350º for about 35 minutes. It should be lightly browned but not too dark because it will go back into the oven again in a bit.

Let stand for 5-10 minutes before adding the topping.

Brown the ground meat and add some more of the seasonings, the enchilada sauce, and green chiles. I like to purée the green chiles. Combine well and spread over the slightly cooled crust.

Top with remaining cheddar cheese.

Bake another 20 minutes or so until the cheese is melted and bubbly. Oops! Almost forgot to take final pictures, so this is all that was left in the baking dish at the time.

Serve with your choice of toppings: lettuce, tomato, sour cream, salsa, avocado, et cetera.

Enchilada Bake

Ingredients

  • Crust:
  • 4 ounces cream cheese, softened
  • 2 eggs
  • 1/2 teaspoon taco seasoning
  • 8 ounces cheddar cheese, shredded
  • Topping:
  • 1 pound ground meat
  • 1 Tablespoon taco seasoning
  • 8 ounce (or so) jar enchilada sauce
  • 4 ounces chopped green chiles (I purée mine)
  • 8 ounces cheddar cheese, shredded

Instructions

  1. Beat cream cheese and eggs until smooth.
  2. Add in taco seasoning.
  3. Add in the cheese and mix well.
  4. Spread into greased 9x13 baking dish.
  5. Bake at 350º for 35 minutes or so, until it is lightly browned.
  6. Remove from oven and cool for 5-10 minutes.
  7. Brown the ground meat and drain away any excessive grease. I use ground turkey so there isn't much.
  8. Add in taco seasoning, enchilada sauce, and green chiles. Combine well.
  9. Spread over crust.
  10. Top with remaining cheese.
  11. Bake 20 minutes or so, until cheese is melted and bubbly.
  12. Serve with your favorite toppings. (lettuce, tomato, sour cream, salsa, avocado, green onions, etc.)
