Tiffany and I are embracing the Thyroid Type Body Type Diet, since we both tested out as that body type. I’m very thankful for finding out that information because I’m able to tailor my Trim Healthy Mama food choices into this body type recommendations. In this case it means that we need to eat more Energizing meals which are healthy carb meals.

It is also highly suggested that we have salads with lots of raw veggies: peppers, cucumber, radish, green onion, tomato, and of course, lettuce and such. During the Stubborn Loser’s Menu from Trim Healthy Mama, Tiffany and I learned that this eating style will most definitely help us lose weight. So we are 100% in!

I shared last week, I think, how we prepped a bunch of chicken. It was six pounds that we did and we froze most of it. It’s a good thing too because we are only supposed to have 4 ounces of lean meat with our salad and a total of 1/2 teaspoon of fats with the meal, which falls right in line with THM-E meals. It continues to follow the same idea with only having 1/2 cup of a whole grain carb, which is the low end of THM suggestions.

So in the first salad pictured above we have some of the balsamic seasoned chicken with some fat free cheese. Yeah, I know, neither diet suggests this but I’m just gonna be real with you, we love cheese!!! And totally miss it, so we added 1/4 cup to this salad and are calling it our “personal choice” item. ;)

In the same salad above we toasted a piece of Silver Hills, The Big 16 Sprouted Power Bread, and cut it up into croutons. :) That was our carb source. We take a little squirt (we put our MCT oil in a squirt bottle) of MCT oil and rub it onto the leaves of the salad. You’d be amazed at how far the little 1/2 teaspoon (or less) can go when rubbed or as Pearl would say, messaged onto the leaves.

In this next salad we used a half cup of brown rice as our carb source and some more of the chicken for our protein. We again used the message method for getting some moisture onto our salad.

We’ve really gone outside the box and used baked sweet potato for our carb source. We’ve even used quinoa. This week we used tilapia for our protein source because both diets recommend having fish a couple of times each week.

I’m so thankful for the “e” meals in THM because without them I would be so bored with this diet. For those familiar with THM and their recipes, we’ve had Cowboy Grub and will have Quinoa Goes Cajun too. As of last Tuesday, I’d lost a little over six pounds in just a week . . . of course those were pounds that I put on over the holidays, as I did not pay attention to even the 3-hour rule of eating, and thus overindulged a bit, as well as was a bit abusive to calories, meaning I ate too rich food. ;)

If you are on THM and struggling with finding your balance of fuels, I suggest taking the body type diet questionnaire to determine which diet you should follow to lose weight and then incorporate more of those THM meals into your diet. (The one we did was from our chiropractor and I have seen that many chiropractors use the same or very similar thing.)

I hope this gives you some ideas to brighten up your carb source salads.

Sprouted Spelt Rolls ~ Lifeofjoy.me

Spelt Rolls

I learned that sprouted spelt flour cannot be used interchangeably for sprouted whole wheat. Yeah, in spite of a recipe saying that was indeed the case, every time I made that bread, it required more spelt than listed. I finally did some research and found that spelt flour needs 25% less water. I finally decided to just look for a spelt flour recipe and found a gem!

I chose to weigh my flour to ensure it would turn out right.

Sprouted Spelt Flour ~ Lifeofjoy.meI add the yeast and salt. I skip the sugar because I chose to use some honey instead, so I added that to the wet ingredients later.

Added salt ~ Lifeofjoy.meAdding Yeast ~ Lifeofjoy.meThen I put it into my KitchenAide mixer because it’s just easier.

Whisk dry ingredients ~ Lifeofjoy.meNext I heat up the water, almond milk, honey, and olive oil to 110º – 120º.

Add almond milk ~ Lifeofjoy.meWater ~ Lifeofjoy.meAdd honey ~ Lifeofjoy.meheat wet ingredients ~ Lifeofjoy.meThen add the wet to the dry and mix for a couple minutes.

mix ingredients ~ lifeofjoy.meI switch out the whip for the dough hook and continue beating as described in the directions on the link.

Kneading spelt roll dough ~ Lifeofjoy.meI failed to get pictures of the rest of the process (but may remember next time I make them ;) ). I just follow Dana’s directions and they turn out wonderful.

Creamy Chicken and Wild Rice Soup

Smooth, creamy, and comforting delicious soup! This one is a THM E soup which means it is low in fat and has some good healthy carbs in there but it tastes anything but low fat. :)

I was looking through the Trim Healthy Mama Cookbook looking for something new to add to my menu one week shortly after starting THM. We had the promise of a few cooler days, which to me means soup. :) This one sure didn’t let me down.

So here’s what I do:

I finely dice about 3 or 4 stalks of celery and a large onion. Then I put them in my dutch oven with a little water, about a tablespoon or two. You don’t want so much that the veggies are swimming in it but enough to keep them from sticking to the bottom of the pan.

Saute Onions and Celery ~ Lifeofjoy.mePeriodically stir them and add more water as needed, until they have lost their crunch. They don’t have to be too well done because they are going to be cooking for over an hour so they will soften even more. You see, my family is picky about veggies, they should be melded into the flavor of the soup and not heard/crunched on. ;) Yes, this increases the amount of time required to cook this recipe but it is worth it for us.

Now we need to get the cauliflower cooked. So, sometimes I remove the veggies and others I just add the broth and cauliflower. Once the cauliflower is fork tender, use a slotted spoon and remove it from the pot to the blender, along with two cups of the broth. If some of the onions and celery makes the trip with the cauliflower or broth, no big deal. :)

Remove Cauli to the Blender ~ Lifeofjoy.meNow add carrots. I like to slice them on my mandolin. Again, we don’t like crunchy veggies so having these sliced thinner is better for us. ;)

Wild Rice Blend ~ Lifeofjoy.meAlso add in the salt

Pink Himilayan Salt ~ Lifeofjoy.mefreshly ground pepper

Broth with Ground Pepper on top ~ Lifeofjoy.meand herbs. We do not care for thyme so I use oregano. :)

Oregano ~ Lifeofjoy.meSimmer for 45 minutes to an hour.

Add three ounces of Neufchatel cheese (1/3 less fat cream cheese) to the cauliflower in the blender and blend until smooth. Then add it to the simmered soup.

Add creaminess ~ Lifeofjoy.meStir it in well; then add pre-cooked chicken. I like to use chicken I cooked in the crockpot earlier in the week but you could always just take a large breast and saute it in a pan while the soup was simmering.

Stir it all together and let it heat up and meld the flavors at a simmer for about 15 minutes. You want the rice to break apart but it is ready as soon as it is hot. :)

I used the version from the cookbook. :)

Here are the tweaks I made:

  • less celery
  • substituted yummy oregano for the thyme
  • sautèd the onions and celery to ensure they were not detectable in the final soup
  • sliced the carrots on the mandolin so they too would be completely cooked
  • I did not measure the chicken, veggies, or black pepper
  • Oh! And I mistakenly used rice blend instead of just wild rice.

I hope you enjoy this as much as we have. Oh! It can be served with a slice of sprouted grain bread (warm from the oven is delightful) and still be an E.
