Spaghetti

A tomato-based meat sauce with some of the acidity removed.

I’m going to share my “recipe” for spaghetti today. It’s one of those, not-really-a-recipe, kind of recipes though. My mom taught me to make this and she never used a recipe either.

Actually, I use this same sauce, with only slight changes, for lasagna too. Don’t be scared off by the zoodles (the green strands). This is my normal spaghetti sauce that I serve over angel hair pasta but since I’m on keto right now, we are having it over the strips of sauteed zucchini.

So this is super simple. Start by browning one pound of ground meat. I use ground turkey right now. Season with some salt and pepper. Add one 6 ounce can of tomato paste. Then fill the empty can with water and add it as well; add one more can of water and combine.

Spaghetti ~ Lifeofjoy.meMix it in well and add 16 ounces of plain tomato sauce.

Spaghetti ~ Lifeofjoy.meAdd a sprinkling of onion powder and a dash of garlic powder. Simmer.

Now the important thing is to add about 1/8th of a teaspoon of baking soda. Stir it around. It will bubble up and remove some of the acidicness. (Yeah, that’s probably not even a word. ;) ) If you cook this in a cast iron skillet like I did, don’t let it simmer very long with the baking soda in it or it will darken on top. It doesn’t do this in any other skillet or pan that I know of.

Serve over pasta or zoodles or whatever you choose. :)

Ingredients

  • 1# ground meat
  • onion powder
  • garlic powder
  • salt
  • pepper
  • 6 ounce can tomato paste
  • 16 ounces canned tomato sauce
  • 1/8 teaspoon baking soda
  • Shredded cheese or Parmesan cheese (optional)
  • 1/3 cup diced green, red, orange, or yellow pepper (optional)
  • 1/3 cup diced onion (optional)
  • 1/2 cup diced mushrooms (optional)

Instructions

  1. Brown the ground meat. (Can add the veggies to cook with the meat or saute separately.)
  2. Season with salt and pepper.
  3. Add tomato paste. Fill empty can with water (two times) and add to meat and tomato paste.
  4. Add tomato sauce.
  5. Sprinkle with onion powder and dash with garlic powder.
  6. Bring to a simmer.
  7. Add the baking soda.
  8. Serve over zoodles or pasta.

Crazy Cabbage ~ Lifeofjoy.meThis is another of those recipes I got back when I was either on Atkin’s or on the hCG diet. I got it from http://genaw.com/lowcarb/index.html. She has tons of low carb recipes over there. I like a lot of them. The green been and hamburger casserole is a favorite here.

As some of you may recall, Michael is allergic to beef and pork, so I have to change this up a bit for him. However, this is one of those recipes that I’m unwilling to change for myself and the kids. (Yeah, they’re not really “kids” any more but what do you call young adults that still live with you?) So, I change it up a bit for Michael and make it with the beef and bacon for the kids and me.

Start by browning your ground beef with the chopped onion and some salt and pepper.

Crazy Cabbage ~ Lifeofjoy.meSpray your 9×13 casserole dish. Place half of the cabbage on the bottom of your pan and season with salt and pepper.

Crazy Cabbage ~ Lifeofjoy.meSpoon about 2 cups of tomato sauce on top of the cabbage. Then add bacon. The original directions say to place 3 pieces of bacon across the top. I happened to have these bacon pieces so I laid them out evenly over the top.

Cover with foil and bake at 350º for 3 hours. NOW I MUST SAY that I used a glass pan, so I reduced the temperature down to 325º. I also like my bacon a little crispy because I’m going to eat that yummy stuff rather than discard it like the original directions state. Consequently, I removed the foil for the last 30-60 minutes of baking.

I have a gas oven so broiling things is a real pain but if I had an electric oven, I’d just broil it to crisp up the bacon.

Crazy Cabbage

Ingredients

  • 1 1/2 pounds ground beef
  • small onion, diced
  • small head of cabbage, coarsely chopped (less than two pounds before trimming)
  • nearly 2 cups tomato sauce
  • salt and pepper

Instructions

  1. Brown the beef with the onions, salt, and pepper.
  2. Grease 9x13 casserole dish.
  3. Place half the cabbage in the pan.Season with salt and pepper.
  4. Spread cooked beef and onions over the cabbage.
  5. Spread remaining cabbage atop the beef. Season with salt and pepper.
  6. Spoon tomato sauce atop the cabbage.
  7. Place bacon on top of the tomato sauce.
  8. Cover with foil and bake at 350º for 3 hours. (I removed the foil for the last 30-60 minutes to brown the bacon because I'm not tossing that yumminess.)

Taco Mac Salad

I don’t know why we call this Taco Mac Salad when there is no macaroni in the salad. It should be called Taco Pasta Salad but then I’d mess myself up when I’m looking for the recipe. :D I think I got it from Menus4moms way back when it was free. It is one salad recipe that my family really enjoys and I’m getting some veggies into them.

This recipe is easily adaptable to whatever you have, there are just some items that are musts: pasta, raw greens, meat, and cheese.

Let’s get started. When we made this yesterday, I cheated and had purchased a bag salad. :) So we just emptied that into a bowl.

I chopped up about a half cup of green pepper.

So far I’ve used pre-packaged seasoning because it is easiest but in the future we may use a mixture of onion powder, garlic powder, salt, freshly ground pepper, paprika, cumin, and chili powder OR we may just forego the taco seasoning altogether since it seems to bother some members of the family.

Combine the lettuce, green pepper, cheese, meat, and drained pasta.

Taco Mac Salad ~ Lifeofjoy.meI let each person put the nacho chips on their plate rather than mixing it in the whole bowl; that way, if we don’t eat it all in one sitting, the chips don’t get all soggy and thus nasty.

Taco Mac Salad ~ Lifeofjoy.meI also do not put dressing on this in the bowl, but let each person put on how much they want. Some of my kids don’t use any dressing at all. I also have diced tomato and either diced onion or green onion available for those that want them. As you may guess, some of my kids don’t like these items either. This night I had some avocado available as well.

Ingredients

  • 1 box (8 oz) tri-color spiral pasta, cooked and drained
  • 1/2 cup diced green pepper
  • 1/2 head of lettuce, broken into bite-size pieces
  • 8 oz. cheese, shredded (We've used cheddar, colby-jack, and pepper jack cheeses.)
  • 1 pound ground meat
  • 1 packet taco seasoning
  • 1 bag (16 oz) Nacho chips (like Doritos)
  • other items as desired: tomato, onion or green pepper, avocado, et cetera
  • 1/2 cup Catalina dressing (or dressing of your choosing)

Instructions

  1. Boil the pasta and drain.
  2. Brown the ground meat, drain if greasy, and add taco seasoning.
  3. Combine all ingredients except chips and taco seasoning.
  4. Serve with chips crushed in bowl with salad and add dressing as desired.

PS. The original recipe said to combine the cooked pasta, lettuce, green pepper, and 1/2 cup diced onion with some salt and pepper and chill. Then when you are ready to serve it, add the warm meat, chips, and 1/2 cup French dressing; toss gently and sprinkle with the cheese just before serving.

This is one recipe that I was skeptical of even trying because I didn’t care for cooked cabbage. I got this about a dozen or more years ago. It was part of a weekly menu and grocery list, so to give the whole menu thing a decent go, we tried it. I was pleasantly surprised.

I actually think I like it better than I would actual cabbage rolls because you can modify how much cabbage you use. So let’s get to it. :)

Brown one and a half pounds of ground meat (I use ground turkey) with either onion and garlic or onion powder and garlic powder, salt and pepper.

Meanwhile, slice or chop half a head of cabbage. I slice it on my mandolin.

Break up the browned meat. Drain, if you have fatty meat. The turkey I use, although by the numbers it should be rather fatty, most of the moisture evaporates and I have no need to drain it.

That handy gadget is one I got from Pampered Chef and I really like it for breaking up the meat.

Add the cabbage, bit by bit. If you try to add it all in at once, you will most likely, have a big mess on your hands. But if you add it bit by bit, it wilts and there is plenty of room for it all. :)

This night I served it with rice and that wonderful homemade artisan bread that I mentioned last Friday. I’ll be whipping up a batch of this awesome bread again today and will take pictures to share in the next couple of weeks.

The original recipe suggested serving with a dollop of sour cream on top.

Ingredients

  • 1 1/2 pounds ground meat
  • 1 onion, chopped or some onion powder
  • 2 cloves garlic, pressed or some garlic powder
  • 1/2 head cabbage, chopped or sliced
  • 8 ounces V-8 vegetable juice
  • salt and pepper to taste

Instructions

  1. In a large skillet, start browning the meat, adding the onion and garlic or onion powder and garlic powder, salt and pepper.
  2. Drain grease as necessary.
  3. Add the cabbage bit by bit, as it wilts, add more.
  4. Add the V-8, simmer on low for 7 minutes on low, covered

Meatloaf

Today’s recipe is another of those ‘not really a recipe’ recipes. ;) My mom taught me how to make this and that means that I watched her make it to learn how to make it.

Brian’s birthday is later this week. We will go there for some swimming and fireworks. This year we will be doing the extended family celebration of his birthday that day instead of Sunday at my mom and dad’s. So today we are celebrating his birthday with just our immediate family. Thus, he gets to pick his meal and dessert. He chose meatloaf and scalloped potatoes and strawberry cheesecake. I’m surprised because he usually picks chicken enchiladas and mud pie (which I hope to make soon so that I can include it on the blog).

I double this ‘recipe’ when I make it for all of us, so the pictures will look much bigger than what this ‘recipe’ will look like without doubling.

Start by crumbling or chunking one pound of ground beef (I use ground turkey for Mike – meatloaf is one of the few things I do not like made with ground turkey) into your pan. I use a 9×13. Next crumble 1-2 pieces of bread on top of the meat.

Then break one egg on top (you could beat it slightly if you wanted).

Then pour about 1/8-1/3 cup of milk on the bread. You want to moisten all the bread. (If you wanted, you could break up the bread into a bowl and pour the milk on the bread and let it soak it all up and then add to the ground meat.)

Then mix it all up. I just use my hands. Form into a short loaf – no more than 1 1/2 inches tall. Any thicker and it will take longer to cook.

Finally top with ketchup, smearing all over the loaf. Sean and Tiffany don’t like much ketchup on it but Brian, Lauren and I do. :) So one end gets just a hint of ketchup and the other 2/3 gets a much thicker coating.

Put in the over on 350º-375º for about 45-60 minutes, until the fat that is rendered browns just a bit. Cut it in half to ensure there is NO PINK left in the loaf.

Mom always made meatloaf with scalloped potatoes. We never had one without the other. It’s actually funny because for years I didn’t make one without the other. In the last several years I started making scalloped potatoes with other meals too. :D

Chili

Chili ~ LifeofJoy.meI never really liked chili until Mike and I were dating. One winter Sunday, he took me to his dad and stepmom’s  place and she fixed chili. As you might imagine, I wasn’t very excited about it but felt I should force some down.

I was pleasantly surprised to see that she served shredded cheddar cheese with her chili. I thought, I might actually be able eat this now. I piled the cheese on my half bowl of chili and took one tenuous bite. I was surprised yet again, to find that I actually liked it! Turns out, it wasn’t just the cheese that made the difference; her chili was sweet! Needless to say, I’d never had sweet chili before. It was delicious!

After we got married, I asked Mary (Mike’s stepmom) for her chili recipe. I have made it many times since, especially once the weather turns cold. The weather had turned nice for about a week or so, I even had to open the windows one day and then it got cold and snowed. So I made this recipe and it warmed us right up.

IMG_9085First brown 1 to 1 1/2 pounds of ground meat. I use ground turkey instead of ground beef.

Sometimes I add finely diced onion and green pepper to the meat as it is browning and sometimes I just add onion powder to the meat, about 1/4 teaspoon or so. I basically just sprinkle it over the meat until I can smell the onion scent.

Next add a can of kidney beans and a can of crushed tomatoes. If I have a packet of chili seasoning I add it now as well. If I don’t have that, I just use some seasonings. (1½ tablespoons chili powder, ½ teaspoon cumin, ½ teaspoon garlic powder, 1 teaspoon onion powder, ¼ teaspoon pepper, ½ teaspoon paprika, and salt to taste)

Next add a squirt of mustard and ¼ cup brown sugar. Simmer for 2 hours or as long as you can wait. It’s great served with bread or cornbread.

Cheeseless Bowl of Chili ~ LifeofJoy.meCheesy Chili ~ LifeofJoy.meSean prefers it over corn chips. Served that way, we have it other times of the year as well.

If you’ve never tried sweet chili before, give this one a shot. If you aren’t a fan of beans, you can leave them out as well but you may need to add a bit of tomato sauce or more tomatoes or it may be too thick.

Chili

Ingredients

  • 1 - 1½ pounds ground meat (turkey or beef)
  • 15 oz. can kidney beans
  • 28 oz. can crushed tomatoes
  • 1/3 of a green pepper, diced
  • 1/2 of an onion, diced
  • 1/4 cup brown sugar
  • squirt of mustard (about 1½ tablespoons)
  • salt and pepper to taste
  • chili seasoning packet (or 1½ tablespoons chili powder, ½ teaspoon cumin, ½ teaspoon garlic powder, 1 teaspoon onion powder, ¼ teaspoon pepper, ½ teaspoon paprika, and salt to taste)

Instructions

  1. Brown ground meat with onion and green pepper or just with just onion powder. Drain any grease if more than a couple of tablespoons worth.
  2. Add other ingredients and bring to a boil.
  3. Reduce heat and simmer for a couple of hours or as long as you can manage to wait. 😉

I fixed these last week when Brian and Lauren came for dinner. Since there were 6 of us, I doubled this recipe. And since Mike cannot have beef and Lauren doesn’t like turkey, I made one pound with ground beef and one pound with ground turkey. Both were delicious! I divided each pound of meat into 3 burgers, making 3 third pound burgers but with the cheese and bacon in them, they were even larger. I do believe that one pound of meat could be stretched to feed 6 if some were smaller children, but we have 6 adults. I will also note that those of us that ate the beef burgers were too full for dessert even an hour or more later.

Ground turkey with worcestershire sauce ~ LifeOfJoy.meI break up the meat in a mixing bowl and add 3-4 shakes of Worcestershire Sauce. (I know this is kind of unappetizing as far as pictures go, but I wanted you to see about how much Worcestershire sauce there is.) Add salt and pepper as desired; I use about 3-4 shakes of my table salt shaker and about 2-3 twists of my pepper mill.

Then cut the cheddar cheese into small cubes. These need to be big enough that they will melt into cheesy pockets of yumminess but small enough that you can get the ground meat worked around them. I used about 3½ ounces of cheddar cheese and cut them into about ¼-inch cubes.

Next cut TURKEY BACON into about ¼-inch square pieces. I do this by stacking about 3 slices of turkey bacon on top of each other. I then cut them in half along the length of the pieces and then cut into approximately ¼-inch pieces all the way down the stack.

Now mix it all together ensuring that you are getting as much of that cheese covered with the meat as possible, so that the yummy goodness is melting inside your burger rather than in your pan. ;)

Put them in a pan and cook. When I want to hurry them along, I put a lid on the pan, because it will help it to begin cooking on the top as the bottom cooks. Flip when the bottom is browned.Bacon and Cheese Stuffed Burger Close-up ~ LifeOfJoy.me

Ingredients

  • 1 pound ground meat
  • 3-4 ounces cheddar cheese, cubed
  • 3-4 slices turkey bacon, cut into small pieces about ¼-inch by ¼-inch
  • Worcestershire sauce
  • salt and pepper

Instructions

  1. Break thawed meat into a medium size mixing bowl.
  2. Add 3-4 shakes of Worcestershire Sauce, salt, and pepper.
  3. Add cheese cubes and turkey pieces.
  4. Combine as best you can.
  5. Separate into 3-6 burgers (I did 3 for adults but it was VERY filling.)
  6. Fry in non-stick skillet or pan sprayed with oil spray like Pam. Brown on both sides.

Enchilada Pie

I’m really going to have to get better at taking pictures before we eat. I’m managing to get pictures taken while I make it but when it is finished, we are a bit impatient to eat. I took this one with the leftovers. :D

I was first introduced to this yummy casserole when I was a teen and our family was on vacation in Nags Head, I think, with another family from church. Brenda, the matriarch of the other family, made this for all of us for dinner one night and it left an impression on me. Years later the church put together a cookbook for a fund raiser, I purchased one and thankfully this recipe was in that book.

I use ground turkey instead of ground beef, since Mike is allergic to beef. Generally speaking, I do not care for ground turkey but because the sauce is so rich in flavor, it tastes great. It also saves me money because I can find ground turkey cheaper than ground beef. :)   Win. Win. (a quote from Letters to Juliet)

My children have never liked onions cooked in food but actually like the flavor of onion powder in foods; I guess it is the “crunch” of the vegetables that they don’t like. Consequently I use onion powder instead of an onion in this recipe. There is a similar problem with tomatoes, so I either puree the canned tomatoes or use crushed tomatoes; it all depends on what I have on hand.

I love cheese. Thus I always think the more cheese the better BUT that is not very frugal. This recipe has a unique way of tricking the taste buds to think that there is more cheese in it . . . trust me, you have no idea, when eating it, that you aren’t eating cheesy goodness. :)

Oh! One final thing before I share the process of making this yummy dish, although it uses two pounds of ground meat it makes A LOT. Just last Saturday I fed our family of six – 5 adults and one 17yo – AND had LEFTOVERS. Thus this recipe really could be cut in half or serve what you need (half or less for family of 4) and wrap and freeze the other half, once it cools. I have actually done this during the holidays for an easy meal.

This recipe has passed the Pickiness Test by Lauren. ;)  It is a new addition to her favorite foods list.

Brown the ground meat and break it up.Brown Ground Turkey ~ LifeOfJoy.me Since I’m using ground turkey there is very little grease, if any but if you use ground beef, you’ll want to drain out the fat. (I like to use a turkey baster to accomplish this.)

Next I add the onion powder. I don’t really know how much, maybe a ½ tablespoon or so – basically, I just shake it on, sprinkling it over the entire surface of the meat, until I smell it. ;) Then add the garlic powder, salt, and pepper, and mix it all together.

If I use a can of diced tomatoes, I puree it in my mini food processor or with my hand blender, while the meat is browning.

Next I add the tomato puree (or crushed tomatoes), can of tomato sauce, package of taco seasoning, and chili powder. I puree the green chiles the same way I did the tomatoes and add them to the meat mixture as well. The sauce is now complete.

Enchilada Pie Sauce ~ LifeOfJoy.meNext cut the corn tortillas into pieces to cover the casserole dish evenly. Here is how I cut them. Take the stack and cut it in half. Then take one half and cut it in half.

Now layer them in the casserole dish sprayed with “Pam”. I use a 9×13 baking pan.

Layered Tortilla Pieces ~ LifeOfJoy.meNext pour the sauce over the tortilla pieces and layer the other half of the tortilla pieces on top. Combine the cream of chicken soup and milk and pour over the tortillas. Then top with the shredded cheese.

Serve with lettuce, tomato, sour cream, and/or hot sauce.

When I made this Saturday, I made it in the crock pot so that we wouldn’t heat up the house. I put about 1/3 of the tortillas on the bottom, 1/2 the sauce, 1/3 tortillas, about 1/3 of the cream soup milk mixture, a bit of the cheese, the rest of the sauce, last of the tortilla pieces, remaining soup milk mixture, and the rest of the cheese.

Yield: 8-10 servings

Ingredients

  • 2 lbs. ground meat (ground turkey)
  • 1 medium onion, finely diced OR about 1/2 tbsp onion powder
  • 1/2 tsp garlic powder
  • 1 - 8oz can tomato sauce
  • 1 - 14.5 oz can diced tomatoes OR 2 cups crushed tomatoes
  • 1 - 4 oz. can green chiles
  • 1 pkg taco seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)
  • 1 Tbsp chili powder
  • 14 oz corn tortillas
  • 1 can cream of chicken soup, undiluted
  • 3/4 cup milk
  • 2 cups (8 oz) shredded cheddar cheese, or variety of your choosing
  • Optional toppings:
  • finely sliced lettuce
  • diced tomatoes
  • sour cream
  • hot sauce

Instructions

  1. Brown ground meat and diced onion (drain if necessary) in a large skillet and crumble meat.
  2. Add garlic powder (and onion powder if not using fresh onion).
  3. Add salt, pepper, chili powder, taco seasoning, tomato sauce, green chiles, and crushed tomatoes.
  4. Cut tortillas and place half in the bottom of a slightly greased 9x13 pan, covering completely.
  5. Pour in sauce.
  6. Layer on the other half of the tortilla pieces, covering all the meat.
  7. Combine the cream of chicken soup and milk. Pour over tortilla pieces.
  8. Sprinkle the shredded cheese over soup milk mixture.
  9. Bake uncovered at 350º for about 45 minutes or until the cheese is bubbly.
  10. Serve with thinly sliced lettuce, diced tomatoes, sour cream, and/or hot sauce.
