So Many Pancakes!

We love pancakes around here. Well actually, we like waffles too but you can make twice as many pancakes in a shorter period of time than waffles. So, we have to be able to have pancakes.

Well there is no lack of pancake recipes to choose from. Last Saturday we had the Giant Blueberry Baked Pancakes from Trim Healthy Mama Cookbook page 261.

Then Sunday when we had company for breakfast we had Baked Pecan Pancakes! Yum! They are in Trim Healthy Table (THT) page 338.

I don’t remember which pancakes these were but they were good. These must’ve been an E pancake topped with a bit of jelly and a dab of Greek yogurt.

There are pancakes for any fuel type you want. The syrup on page 480 of THC is good. If you add the tiny bit of molasses it is even dark brown like regular syrup. (Some people, like my Sean, can eat the Sukrin Fiber Gold Syrup on pancakes and such but it does mess with some people’s blood sugar; so if your weight has stalled, you might want to avoid this one.)

I couldn’t find any more pictures of my pancakes, so I guess I’ll stop there. Those are our favorites. I hope you find this round up helpful.

Breakfast Burrito ~ Lifeofjoy.me

Sausage Veggie Breakfast Burrito

Nice mix of veggies, sausage, and egg without any one ingredient being overbearing.

Last week I was hungry for a breakfast burrito and was so glad that I still had a Joseph’s Lavash left in the refrigerator. Half of one lavash is allowable once in a while on Trim Healthy Mama in an S meal. So I cut a lavash in half and Tiffany got half and I got half.

Cut a Joseph's Lavash ~ Lifeofjoy.meI put two to four ounces of sausage in my skillet and began to brown it.

Bulk Sausage in Pan ~ Lifeofjoy.meThen I grated a small to medium zucchini into the pan.

Grating in Zucchini ~ Lifeofjoy.meNext dice up a mini pepper or about a quarter of a medium bell pepper. I used a yellow one this time but any color will do.

Yellow Pepper ~ Lifeofjoy.meAdd it to the pan and saute.

Cooking vegetables and sausage ~ Lifeofjoy.meDice up one large mushroom and either one some tomato and add them as well. Season with salt, pepper, and nutritional yeast, if desired. (The salt helps to draw out the moisture and cook the veggies.)

Breakfast burrito ~ Lifeofjoy.meYou can either add a bit of oil, like coconut oil, or just a bit of water, if things start sticking to your pan.

Slightly beat two to four eggs. The first time I made this I only used two eggs because we didn’t want egg to over power the taste but even though I wrote looked at what I’d written down previously, I did four eggs before I realized it. 😯 Not to worry though, we were still on plan, the egg did not over power the taste, and we had a lighter lunch.

When the egg is nearly cooked through, add two wedges of light laughing cow cheese. You could use the pepperjack version if you want it spicy.

Sausage Veggie Breakfast Burrito

Ingredients

  • 2-4 ounces sausage
  • 1 Roma tomato, about 7 grape tomatoes, or a couple of slices of larger tomato
  • 1 mini pepper
  • 1 small to medium zucchini, shredded
  • 1 large mushroom, diced or sliced
  • 2 eggs, beaten
  • 2 wedges of Light Laughing Cow Cheese
  • 1 Joseph's Lavash cut in half
  • salt and pepper, as desired
  • Nutritional yeast, as desired (optional)

Instructions

  1. Brown the sausage and add the vegetables and cook to desired doneness.
  2. Season with salt, pepper, and nutritional yeast (optional)
  3. Add beaten eggs and stir as they cook.
  4. Add the cheese wedges and blend with cooked sausage, veggies, and eggs.
  5. Place half the filling in a lavash half, roll up, and eat.
  6. (If you put the filling in the lavash over the length of the lavash, you may need to cut it in half to eat it properly. 😉 )

Big Bowl Cinnamony Oatmeal ~ Lifeofjoy.me

A BIG Bowl of Creamy Oatmeal

Filling, creamy, big bowl of cinnamony oatmeal (or chocolate or strawberry, lots of possibilities).

Growing up when we had oatmeal, it was generally the standard old fashioned rolled oats. Mom made it following the directions and served it with buttered toast. Our oatmeal was nice and thick and could be easily situated on top of the toast, if so desired. ;) Of course, I put LOTS of sugar in my bowl of oatmeal to make it nice and sweet but also a little less dense. The thought never occurred to me, to add milk.

Now, all these years later, I’ve tried different versions of oatmeal, mostly due to Trim Healthy Mama. I have to admit that I am NOT a fan of milky oatmeal that somewhat resembles a bowl of cereal with all the milk, also known as Creamy Grains in the THM Cookbook pgs. 252 and 253. (I’m not a huge cereal fan either though.)

I attempted the Big Bowl Cinnamon Oatmeal (THT pg. 354) recipe, the first time, with some reservation. But I needed a THM E (carb meal) breakfast and this promised to be a BIG bowl with substance.

WOW! I was surprised and impressed. This is now my favorite way to eat hot oatmeal. :) Well, since I cannot have a nice piece of toast slathered in butter and still lose weight. :D

I won’t share the whole recipe but will share enough of the directions with you that you can still make it, even if you don’t have the cookbook. (But seriously, you should get the cookbooks, there are so many great recipes in them.)

I made a double batch because Tiffany and I both wanted a full serving. :) The written directions will be a single serving though. I just didn’t want you thinking what I made was a single serving. ;)

Put 1/2 cup of oats in a pot.

Big Bowl Oatmeal ~ Lifeofjoy.meThen add 3/4 cup almond milk (or whatever milk you prefer).

Almond Milk ~ lIfeofjoy.meNext add in a cup of water, your desired sweetener, a dash of vanilla, and some cinnamon.

Big Bowl Oatmeal ~ Lifeofjoy.meBring it to a quick boil. I put the lid on so that it boils quicker.

Red cooking pot oatmeal ~ Lifeofjoy.me(yeah, it’s a little blurry because I was trying to get the flame to show up and it wouldn’t with the flash, so I had to stand still, and I’m never very still, while the shutter was open)

After it comes to a boil, reduce the heat to low and remove the pot from the heat for about 30 seconds, then return the pot to the burner with the lid on and let it steam for 10 minutes. During that ten minutes the oats will begin to plump. :)

Then turn off the heat and let it sit for another minute or two, to thicken up a bit more.

Cooked creamy cinnamon oatmeal ~ Lifeofjoy.meI know you cannot tell how much this thickened up, but trust me, it is no longer runny.

A BIG Bowl of Creamy Oatmeal

Ingredients

  • 1/2 cup rolled oats
  • 1 cup water
  • 3/4 cup almond milk
  • dash vanilla
  • pinch of salt
  • cinnamon (optional)

Instructions

  1. Put everything into the pot and bring it to a quick boil.
  2. Reduce heat to low and remove pot for about 30 seconds or so to let it cool down a bit.
  3. Place it back on the burner and put a lid on the pot for 10 minutes.
  4. Then remove pot from the burner (turn the burner off) and let is sit for another minute or two to let it thicken up a little bit more.
  5. Sprinkle with a little cinnamon "sugar" on top.

Eggs and Hash

Low-Carb veggies for breakfast! Simple, quick, and filling breakfast of eggs and zucchini.

This recipe is hardly a recipe at all but if you eat eggs several mornings every week, it can get boring to have them the same way every day. This is one way to have them and if you like a runny yolk, you can have your lovely over-easy eggs on top and let that yolk run onto the hash. Mmmm mmmm!

Now, I failed to take pictures of cutting the zucchini but it is really easy. I cut a small/medium zucchini into 4 slices down the length of the zucchini. Then cut eat slab into about 4 strips. Then cut those strips into small little cubes. :)

Put it in a skillet with a bit of coconut oil.Zucchini Hash ~ Lifeofjoy.meSeason as desired. I only used a bit of salt and a tiny bit of pepper.

Cook until desired doneness.

Zucchini for Breakfast ~ Lifeofjoy.meThere is a lot here because I did enough for Tiffany and I, so that was 4 zucchini.

Cook your eggs. If you are only cooking for yourself, move the zucchini to on side of the pan and cook two eggs on the other side, however you like them best.

I like my eggs over medium and Tiffany likes hers scrambled and well done.

Fried Eggs ~ Lifeofjoy.meNo, that is not a pancake! It is how Tiffany likes her scrambled eggs cooked.

Place on top of cooked zucchini.

Add some nutritional yeast for a nice cheesy taste and lots of vitamins. (It took me a eating the nutritional yeast a few times before I warmed up to it and tasted it as cheesy, so give it a few tries.)

Eggs and Hash

Ingredients

  • 2 zucchini, diced
  • coconut oil
  • 2 eggs
  • salt, pepper, and nutritional yeast (optional)

Instructions

  1. Put a little coconut oil in your pan or spray it with oil instead.
  2. Add zucchini.
  3. Season as desired, I used some salt and a bit of pepper.
  4. Cook, cook, cook, until desired tenderness/brownness
  5. Move the zucchini to the side and cook 2 eggs on the other side of the pan, as desired.
  6. Place zucchini hash on plate and top with cooked eggs.
  7. Sprinkle with nutritional yeast for a nice cheesy taste, with lots of vitamins.

Seasoned Eggs

Such a different and tasty way to have eggs. The flavor combinations are endless.

I recently followed Trim Healthy Mama’s Stubborn Losers Menu. When I decide to follow a menu, I go all in! I eat everything the way it is listed, which means taking a chance on different foods.

One of those foods was how to fix eggs. I like an egg with a runny yolk but all the white cooked. I am not a fan of egg whites but the stubborn losers’ menus were designed to help me get the scales moving. In order to do so, the menus do not abuse calories, which I have done more than I can admit.

So I tried their recipe for Big Fried Egg Trick from page 243 of the trim healthy mama Cookbook. The thing I want to share with you today is what I learned about how to season eggs from that recipe.

So, once you get the eggs in the pan, it is really just a matter of sprinkling on whatever seasonings you like.

Seasoned Eggs ~ Lifeofjoy.meI used oregano, onion powder, salt, pepper and nutritional yeast. (I store my nutritional yeast in that shaker that I got from Dollar Tree.)

I cooked it a bit long because I was taking pictures. :p But it was still yummy!

Breakfast Lasagna ~ Lifeofjoy.me

Breakfast Lasagna

We like to have this filling breakfast as a special treat on a Saturday morning. Pancakes, eggs, sausage, and cheese all in one.

This may not be the prettiest meal but it is good enough that it is requested by my kids. I adapted this recipe from ibreatheimhungry. She used her cream cheese pancakes and a dozen sausage links. I make my baked pancakes and use bulk turkey sausage, since at this time Michael cannot eat pork. I probably use a little bit more cheese than the one cup in the original recipe as well. I make a couple other alterations that I will tell you about in a bit.

The only problem I have with it is that my baked pancakes are clearly thicker than her cream cheese pancakes and it towers over the pan. When I make this I use my largest sheet pan but I may have to divide it into two smaller pans in the future, to get them a bit thinner. ;)

Now here’s where I deviated a little from the original again. I butter the layer of pancake because the first time it was a bit too dry and . . .

Next add half the eggs and half the cheese.

We have cut this into four pieces for four adults but none of us eats the whole portion until the next meal. ;) So this can be easily cut into 6 servings or even 8 servings for adults and serves even more when children are involved.

Ingredients

  • One batch of pancakes (baked)
  • 8 eggs, scrambled
  • 1 pound bulk sausage, cooked and crumbled
  • 1 cup cheddar cheese, shredded.

  1. In an 8x8 or 9x9 pan layer as follows
  2. Pancakes (lightly buttered and drizzle of syrup)
  3. Eggs
  4. Cheese
  5. Pancakes (lightly buttered and drizzle of syrup)
  6. Sausage
  7. Pancakes (lightly buttered and drizzle of syrup)
  8. Eggs
  9. Cheese
  10. Bake 350º 8-10 minutes

Sausage egg and cheese biscuit ~ Lifeofjoy.me

Sausage, Egg, and Cheese Biscuit

This is so simple, it is hardly a recipe but maybe a menu idea instead. The delicious combination of sausage, egg, and cheese on a light biscuit.

I have recently been making this wonderful breakfast sandwich using Belle’s Biscuits, which a recipe in Kristie Sullivan’s new Keto Cookbook and on her youtube channel here. It is an easy mixer recipe, that whips up rather quickly. I have also made this with Mug Bread, which I shared here.

So here is how to do this simple breakfast. Start with a biscuit or mug bread, sausage, an egg, and some cheese; I used some mild cheddar.

Cut Biscuit ~ Lifeofjoy.meForm a patty out of some bulk sausage and cook. Cook an egg. Tiffany doesn’t like egg whites, so we scramble up her egg for this sandwich.

Butter the Biscuit ~ Lifeofjoy.meFlip the sausage and egg and cook to desired doneness.

Bacon Hack ~ Lifeofjoy.me

Thick Bacon Hack

Make the less expensive thin bacon into thick bacon, with this tip.

My family has gotten spoiled with the thick cut bacon I’ve been buying at Sprouts lately. It truly is delicious. But it is a tad bit expensive. So I buy the cheaper thin bacon to add to what I buy of the thicker bacon.

However, nobody really cares for the thinner bacon. Although I do have to admit, sometimes it is so nice and thin and crispy that I call it a bacon chip. ;) But  most of the time, we don’t prefer this cut.

Well last weekend when I was baking up some of the bacon for the week, I had run out of space and still had half a package of thin cut bacon left. Then it hit me . . . I can put two pieces together and make it a thicker piece of bacon. And that is just what I did and it turned out nice.

So for today, I thought I’d show you how to do it in a skillet but the same technique applies to putting it on sheet pans and baking it.

Place two pieces on the skillet together. The big ones on the right are two pieces and the little piece on the left is just one.

Baked Pancakes

An unconventional, easy, time saving way to make pancakes.

Being on a low-carb diet, sometimes means that you need to incorporate more fiber. Sukrin has a fiber syrup that we like to use on pancakes – yes, low-carb pancakes. :) Yummo! Anyway, I decided that maybe Sean might want to have some on a daily basis but making pancakes every day is NOT going to happen.

Then I remembered reading on a fellow Oklahoman’s blog, that she made pancakes in the oven. She said it works for any batter that has two cups of flower in it. I wondered if this would work for these low-carb pancakes I’ve been making. (Well, actually, I’ve been using the recipe in her cookbook: Cooking Keto With Kristie: A Journey Worth Taking and it is slightly different than the one in her video, which is slightly different than the one she references on the video.)I decided to give it a try when I wasn’t under pressure; so I attempted it for my breakfast yesterday. It Worked! :) I use her recipe but substitute coconut flower for the pork rinds right now, since Michael cannot have them.

So, here’s how to do it.

Prepare you batter.

Baked Pancakes ~ Lifeofjoy.meGrease your sheet pan. Mine is about 15″x11″ in size. I used coconut oil.

Put in the oven and bake on 375º for 12-15 minutes.

  • Pancake batter that has 2 cups dry ingredients.

Instructions

  1. Prepare batter.
  2. Grease sheet pan/jelly roll pan.
  3. Pour batter into pan and spread out evenly.
  4. Bake at 375º for 12-15 minutes.

Waffles ~ Lifeofjoy.me

Waffles

Quick to throw together for a filling breakfast. I like mine with eggs and sausage because I need to balance out my sweets with other things.

This recipe says it serves 4-6. Ours made about 10-12 individual squares. If you don’t use it all, it can be set in the refrigerator for about a week; just add a bit of water or milk to thin it if necessary.

Combine all the ingredients in order listed and stir just until moistened (flour, sugar, baking powder, eggs, milk, oil, and vanilla).

Once your waffle iron is hot, pour some batter on and close it up. We like to use a soup ladle.

Waffles ~ Lifeofjoy.meWhen you first close it, there will be lots of steam. Depending on how high your waffle iron is set and how crispy you like your waffles, will determine how long your waffles will take to cook but it should be just a few minutes.

As you can see, we didn’t get quite enough batter on the waffle iron, so the squares weren’t all square. ;) But they were yummy!

Ingredients

  • 1 3/4 cup flour (whole wheat, all-purpose, or a combination)
  • 2 Tablespoons sugar
  • 1 Tablespoon baking powder
  • 2 eggs
  • 1 3/4 cups milk
  • 1/2 cup oil or melted butter
  • 1 teaspoon vanilla

Instructions

  1. Combine all ingredients in order listed.
  2. Stir until moistened.
  3. Can be used immediately or refrigerated for up to a week. (Thin with a little milk or water as necessary when refrigerated.)
  4. Pour about 2 ladles of batter on hot waffle iron and close. Follow your device's directions for operation. For ours, when the steam is nearly gone, they are done.
