A Good Week

Last weekend was, as predicted, busy! But it was good. It was fun to bless Sean with his food choices for his birthday: Streusel Coffee Cake, Tuna Melt, Cereal Crusted French Toast with hashbrowns and sausage, and Hot Fudge Pudding Cake.

This is what I was trying to re-create for him; I came close. ;)

I’m also extremely thankful that Tiffany was a huge help to me that day. Birthdays have me hopping. ;)

Sean's 23rd Bday ~ Lifeofjoy.meSean joyfully flinging the tissue paper out of the gift bag that Tiffany kindly bagged for me while I was making the coffee cake. I love that he still knows how to have fun and be playful.

Brian and Lauren came out to celebrate with us. Lauren’s pregnancy is causing her dislike sweet foods. Thus she didn’t exactly enjoy Sean’s birthday dinner. :(

We played family video games together and enjoyed a some family time.

We ran into a snag for Easter dinner. We had planned to go to Ted’s Cafe and even made arrangements to meet my sister, her family, and my parents there. They get out of church earlier than we do but are on the other side of town, so we thought it would work out okay. They arrived at Ted’s, only to find that they were closed for Easter. We all had mixed emotions about this: glad that they were closed for the holiday but sad that we had to find somewhere else to eat.

Well, they went down the road a little ways to a Chinese restaurant and were met with the same situation. Again, happy and sad, at the same time because by this time they were getting quite hungry. ;) They ended up going back across town to a Chinese restaurant we have all frequented and trusted they’d be open. Thankfully they were open but this meant a longer drive for us to meet up with them. It all worked out; it is a buffet and they could begin without us. We arrived shortly and we all enjoyed fellowshipping over a meal together. We hadn’t done this in a very long time. It was quite enjoyable.

Xmas Gift ~ Lifeofjoy.meEaster was the 27th, which is Mike and my designated date night for the month, so we went out on Monday. We had a good time hoping/dreaming together about our future. We went to one of my favorite restaurants, Cheddar’s. Of course we used one of our gift certificates–it’s so nice that we have those and don’t have to be concerned about the money. I don’t know what we’ll do next year when the gift cards are all gone. ;) I’m sure something will work out though.

I always have a hard time choosing what to order there because I enjoy so many items there. This time I settled on the Philly Cheese Steak Sandwich with a loaded baked potato. Mike got a side salad and croissant, with his Chicken Fried Chicken, mashed potatoes, and gravy. It also came with some really good flat green beans that had been cooked in bacon fat, so he didn’t eat those; I ate some of them. :) He also shared his salad and croissant with me . . . he’s a good man.

I really should’ve brought home half of my sandwich though because by the time I finished I was FULL! Oh well, lesson learned and now I know for next time. ;)

We live out in the country, in ranchers’ territory. I’d never heard of burning one’s land before moving out here but it is a real thing! It is a controlled burn that helps have good land for grazing animals. On our way into town for dinner, we noticed that one of the area ranchers was burning his pastures. It was still burning when we came back home but had definitely progressed from where it was when we’d first seen it. (It was right by our road, outside the window, when we went into town.) I find it quite interesting.

Controlled BurnWe did see a firetruck come by, so they seemed to be keeping an eye on it too.

Wow, I really had a lot to share. I guess I’ll carry some of this forward to next week then. I don’t want to bog you down with my rambling and I’ve already carried on way over my usual length.

Until next time, God bless,
